Considerations of senior winemaker Domingos Soares Franco: «In the 1980s’ at José Maria da Fonseca I discovered in one cellar about 200 bottles of Pasmados White 1963 and 1964 vintages’. After tasting both vintages, I realized the excellent quality and good evolution of this wine in bottle. Color with natural evolution, aroma reminding toasted bread and mature walnuts, hazelnuts and pistachio but without oxidation. With this discovery I had the idea to produce a white wine with a similar evolution. Over the years and after several harvests I chose the following varieties, Viognier (clay and lime), Viozinho and Arinto (sandy).»
Pasmados white is one of the top white wines from José Maria da Fonseca being
released only after a minimum period of two years after the harvest.
